Polyspora axillaris, the fried egg tree, is a glossy, small evergreen tree or large shrub of the tea family, Theaceae, native to southern China, Taiwan, and Vietnam and still rarely cultivated in the United States. A close relative of the native loblolly bay (Gordonia lasianthus), the plant bears abundant, showy white flowers three inches across.

The flowers are the whole show: large, crisp white, camellia-like blooms with a bold central boss of bright yellow stamens, so like a fried egg that the common name writes itself. Bloom comes in late fall and winter, an elegant splash of white when little else in the garden is flowering, and the mildly fragrant, nectar-rich blooms draw the season's bees.

The glossy, dark green, leathery leaves make a dense, handsome canopy the rest of the year, and the plant suits mild regions best, zone 9 and the warmer parts of zone 8. Give full sun to part shade and acid, well-drained soil, with afternoon shade in the fiercest heat, and shelter the large flowers from strong wind.

Woodlanders originally propagated cuttings of this uncommon species from a specimen then in cultivation at the famous Tom Dodd Nurseries in Semmes, Alabama. A collector's evergreen for the adventurous southern gardener who wants camellia-like flowers at an unexpected season.

A rare winter-flowering evergreen. Grow the fried egg tree as an evergreen specimen, an informal screen, or an anchor in a mild-climate border, where the glossy foliage carries the year and the big white flowers surprise in late fall and winter. Site in a sheltered spot out of strong wind, which can bruise the large blooms, and pair with camellias, tea olive, and other broadleaf evergreens that share the taste for acid, well-drained soil. A collector's plant with a Tom Dodd pedigree, and camellia-family flowers at an unexpected season.

Flower. Large, showy, camellia-like blooms two to four inches across, crisp white with a bold cluster of bright yellow stamens at the center, so like a fried egg; late fall into winter, mildly fragrant and nectar-rich for bees.

Foliage. Glossy, dark green, leathery, oval leaves two to five inches long with slightly serrated edges, forming a dense evergreen canopy.

All our plants are sold in 1-gallon sizes, though the height of each plant can vary depending on its growth rate and seasonality, typically ranging from 1/2 to 2.5 feet.

Each plant is carefully packaged with its roots enclosed in a secure plastic bag containing moist soil, forming a compact root ball. To ensure safe transport, the box is padded with recycled newspaper, providing both stability and eco-friendly protection from weather during shipping.
