This is a tree you harvest from a boat. Crataegus opaca, the western mayhaw, grows wild in the flooded bottoms of the Gulf Coastal Plain, the cypress sloughs and pond margins of east Texas, Louisiana, and the Deep South, and when their fruit ripens in late spring it drops straight into the water and floats. For generations Southern families went out in May with boats, nets, and scoops to gather the bobbing red haws off the surface, a fast three weeks of work that turned into a year's worth of jelly. The name says as much: mayhaw, for the month, and haw, the old word for hawthorn.

The jelly is the whole point, and it is genuinely famous. The fruit is a small coral pome, tart and loaded with pectin, kin to the apple and the rose, setting into a clear, bright, half-wild preserve that whole towns organize around. Colquitt, Georgia simply calls itself the Mayhaw Capital of the World and throws a festival every April; Louisiana made the tree its official state fruit.

Before any of that, in early spring, they smother their bare gray branches in clouds of white hawthorn bloom, early and generous, a gift to the first pollinators of the year. They were born in standing water but do not insist on it, and will settle happily into an ordinary garden given steady moisture. Plant one for the blossom, the birds, and the biscuits to come.

A native fruiting tree for a pond edge, a low wet spot, a rain garden, or an edible or wildlife planting, though the mayhaw settles happily into ordinary garden soil given steady moisture. Plant where the early white bloom can be enjoyed and the coral haws can be gathered for jelly, and pair with other bottomland natives. Plant more than one for the heaviest fruit set, and give full sun for the best crop.

Clusters of small white five-petaled hawthorn flowers, opening very early on nearly bare branches, each centered with a soft brush of pink-tipped stamens. Among the first real bloom of the year and heavily worked by bees still glad of anything in flower.

Fruit
The famous part. Small round pomes a half-inch or so across, ripening coral to deep red through late April and May, tart and high in pectin, kin to a tiny apple. They drop into the bottomland water and float, are gathered by the bucketful, and cook down into the bright, half-wild jelly the South stays sentimental about.

Foliage
Glossy green, toothed and somewhat lobed, emerging with or just after the flowers along thorny branches. Pleasant but secondary, a quiet backdrop to the spring bloom and the early-summer harvest.

Light. Full sun for the best flower and fruit; part shade is tolerated.

Soil. Moist to wet, acidic ground; thrives at pond edges and in periodically flooded bottoms, but adapts to ordinary garden soil kept moist.

Water. Steady moisture; happy with wet feet, and tolerant of brief drought once established.
