Carya aquatica, the water hickory or bitter pecan, is a large native tree of the walnut family, reaching ninety feet and more in the wild. Across the American South the species dominates clay flats and the backwater ground near streams and rivers, reproducing aggressively by seed and by sprouts from roots and cut stumps, and forming a major part of the region's wetland forests, in part because the more marketable timber trees around the water hickory have so often been logged out.

The tree earns a place in the working landscape as much as the garden. By slowing floodwater and letting sediment settle, water hickory helps cleanse drainage through a bottomland, and the autumn nuts feed wood ducks, squirrels, and other wildlife (the kernels are bitter, hence the common name, and not for the table). Tolerant of wet, periodically flooded ground yet at finest on deep, well-drained soil near water, this is a tree for a large, damp, naturalistic site.

The genus is ancient: Carya ranged widely in the Tertiary, with fossils recorded from Colorado and Washington and as far afield as China, Japan, Europe, and western Siberia.

Plant water hickory only where there is room and the ground is large and damp: a floodplain, a pond or stream margin, a wet bottomland, or a naturalistic native planting that can hold a ninety-foot tree. The species shines in restoration and wildlife work, stabilizing wet ground, filtering floodwater, and feeding waterfowl and small mammals, and pairs naturally with bald cypress, swamp tupelo, and other bottomland natives. Give full sun to part shade; tolerant of flooding, but fastest and finest on deep, well-drained soil near water. Site away from lawns and paths, since the fallen nuts and self-sprouting habit suit a wild setting better than a tidy one.

Flower, Fruit & Foliage

Greenish-yellow male catkins, spring

Flower. Monoecious and wind-pollinated, the tree carrying both sexes. Long, drooping, greenish-yellow male catkins hang in threes in spring, with small, inconspicuous female flowers in short spikes at the branch tips. Not showy, though the catkins lend a soft spring haze.

Fruit. Flattened, thin-husked nuts ripen in fall, the bitter kernels an important food for ducks, squirrels, and other wildlife rather than for people.

Foliage. Pinnately compound leaves of many narrow leaflets, deep green through summer, casting the light, open shade of the hickories before falling.

Light. Full sun to part shade; full sun gives the best growth and nut set.

Soil. Adapted to wet, periodically flooded bottomland, yet fastest on deep, moist, well-drained, acidic to neutral soil near water.

Water. Generous; tolerant of standing water and seasonal flooding, never a tree for dry ground.

Pruning. Prune in late winter to remove dead or crossing wood and lift the canopy; little else needed.

Hardiness. Reliable through USDA Zones 5 to 9, well suited to the warm, humid Southeast.

All our plants are sold in 1-gallon sizes, though the height of each plant can vary depending on its growth rate and seasonality, typically ranging from 1/2 to 2.5 feet.

Each plant is carefully packaged with its roots enclosed in a secure plastic bag containing moist soil, forming a compact root ball. To ensure safe transport, the box is padded with recycled newspaper, providing both stability and eco-friendly protection from weather during shipping.
