The Apothecary That Stands

How people found medicine in bark, root, and resin long before we could name a molecule, and why the oldest pharmacy was never the herb bed but the woods.

The intuition of medicine

I have been sitting for twenty minutes each morning, the way you do in transcendental meditation, letting a sound run under the surface of thought until the mind quiets and something older seems to answer. I did not expect the practice to send me back to the plants. But a few weeks in, in that loosened, listening state, a question arrived and would not leave: how did so many communities of people, scattered across every continent and separated by oceans they could not cross, arrive at the same knowledge that a particular bark eased a fever, that a particular root settled a gut, that a particular leaf, chewed, took the edge off pain? They did this thousands of years before anyone could isolate a compound, run an assay, or draw a molecule on a chalkboard. They had no way to see inside the plant. And still they knew.

The tidy answer, the one we tell ourselves now, is trial and error. And that is part of the truth. But trial and error is a cold phrase for what was really a vast, patient, multigenerational act of attention: people watching, tasting, remembering, and passing the memory forward across so many lifetimes that the knowledge outlived everyone who built it. It is one of the great collaborative works of the species, and almost none of the names survive. When I sit now, that is what the quiet keeps circling back to. Not the chemistry. The knowing that came before the chemistry.

There is a second thing the meditation turned over, quieter and more particular to my own life among plants. Somewhere along the way, medicinal botany shrank. Say the words medicinal plant to most people now and they picture a windowsill of small green herbs, a raised bed of chamomile and calendula and mint, a physic garden the size of a parlor rug. The healing plant became a fragile, soft-stemmed, mostly culinary thing, something you tend at knee height and harvest with scissors. And I love that garden. But the picture is far too small. A whole world of woody plants stands just past the herb bed, trees and shrubs offering up medicine in bark and root and resin and leaf, and most of us walk under them without a glance. This is an essay about that larger apothecary, the one that does not need a raised bed because the raised bed was only ever a scale model of the forest.

II · How did they know?

How did they know?

Start with the body, because the first laboratory was the body. Bitterness is a warning the tongue is built to notice, and many of the alkaloids that make a plant medicinal are ferociously bitter, so bitterness became a signpost rather than a stop sign. Astringency puckers the mouth and, not by coincidence, tightens tissue and slows a weeping wound. Aromatic oils clear the head when you crush a leaf and breathe. People were reading the pharmacology directly off their own senses, a slow bioassay run one careful mouthful at a time, and the ones who read well lived to teach the reading to their children.

They were not the only readers. Long before anyone coined the word, our fellow animals were self-medicating in the open. Field biologists now call the behavior zoopharmacognosy, and the observations are hard to argue with. Wild chimpanzees in Tanzania and Uganda swallow the bristly leaves of Aspilia whole, unchewed, folding each leaf like a pill, and the roughage sweeps parasitic worms from the gut. When a chimpanzee is ill, the same animal will strip and chew the intensely bitter pith of Vernonia amygdalina, a shrub whose compounds are active against exactly the parasites that afflict primates, humans and apes alike. Researchers who study these behaviors make a striking claim: watching great apes doctor themselves may be a window into how our own ancestors first learned which plants were medicine. We may have been students of the animals as much as of the plants.

Field Note

The people who first used a plant as medicine almost never wrote their names down, but sometimes a plant carries the memory anyway. Salix, the willow, holds four thousand years of it: clay tablets from Sumer note the willow as a pain remedy, Egyptian papyri list the tree, and Hippocrates recommended a bitter brew of willow bark and leaf for the pains of childbirth. Cultures that never met each other reached for the same tree. In 1828 a chemist finally isolated the active glycoside and named the compound salicin, after Salix. Aspirin is the willow's great-grandchild.

Where sense and observation ran out, people reached for story, and not all the stories were right. The most famous of the wrong ones is the doctrine of signatures, the old European belief that a plant advertised its use through resemblance: a walnut, folded like a brain, must be good for the head; a plant with liver-shaped leaves must treat the liver. Dioscorides hinted at the idea in the first century, and Paracelsus made a system of it in the sixteenth, teaching that the Creator had signed each plant with a visible clue to a hidden purpose. Skeptics were already picking the doctrine apart by the mid fifteen-hundreds, and modern scholars are nearly unanimous that the theory, taken literally, is fanciful. And yet I find it moving rather than foolish. The doctrine of signatures is what hope looks like when it is starved for data. People believed the living world was trying to tell them something, so they looked hard at leaves, and looking hard at leaves is how you eventually notice the things that are actually true.

And sometimes the knowing arrived just in time, carried by people generous enough to share it with strangers who did not deserve the generosity. In the brutal winter of 1536, Jacques Cartier's crew, frozen in on the Saint Lawrence, were dying of scurvy. The Haudenosaunee at Stadacona showed them how to boil the bark and winter needles of an evergreen they called annedda, the tree of life, into a decoction that cured the sick men within days. Botanists still debate which conifer annedda was, with eastern white cedar and balsam fir the leading candidates, but the point of the story does not hinge on the species. The point is that a people who had never seen scurvy in a book knew precisely which standing tree carried the cure, and knew it in the depth of winter when nothing green was left to eat. That is not luck. That is a library, held in living memory, rooted in the woods.

III · The shrinking of the apothecary

So when did the apothecary shrink to the size of an herb bed? Part of the answer is architectural. The medieval physic garden, the monastery plot, the apothecary's drawers, all of them favored what could be grown in a bed, dried on a rack, powdered in a mortar, and stored in a jar. Soft herbs suit that life. You can raise a crop of them in a season, harvest the whole plant, and start again next spring. A tree does not cooperate with a drawer. Trees take decades, throw shade, break the tidy geometry of a garden, and refuse to be pulled up and replanted at the gardener's convenience. As Western herbalism moved indoors and onto shelves, the plants that fit the shelves won, and the woody healers were quietly reassigned to other departments: timber, orchard, forestry, ornament. The oak became lumber. The willow became a riverbank. The pine became a Christmas.

But here is the irony that the quiet keeps handing back to me. The heaviest medicine in human history did not come from the herb bed at all. It came from wood. Cinchona, a genus of evergreen trees on the eastern slopes of the Andes, carries quinine in the bark, and quinine was for three centuries the only thing that stood between our species and malaria. Indigenous peoples of Peru knew the fever bark; Jesuit missionaries carried the knowledge to Europe around 1640, where one physician declared the bark more precious to mankind than all the gold and silver Spain had taken from the Americas. He was not exaggerating. Empires and armies moved on the supply of a tree's bark. Willow bark gave us aspirin, the most-taken drug on earth. Cinnamon, camphor, witch hazel, slippery elm, frankincense, and myrrh are all wood or bark or resin. The soft green herbs are real medicine and I would never say otherwise, but the plants that changed the course of nations were, overwhelmingly, woody. We just stopped filing them under medicine.

Once you start looking, the woody plants turn out to hold medicine in a genuinely different way from the herbs, and the differences are worth naming.

A tree is a pharmacy that stands for decades

An annual herb offers one harvest and then dies back to seed. A tree or a long-lived shrub stands in the same spot for years, sometimes for centuries, a fixed and returnable source you can visit across a lifetime and hand to the next generation still growing. The willow at the bend of the creek was medicine for your grandmother and will be medicine for your grandchildren. That permanence is not a small thing. It is the difference between a crop and an institution.

Long-lived plants invest heavily in chemical defense

A plant that must survive fifty winters in one place, unable to flee a browsing deer or a fungus or a boring beetle, cannot rely on speed. Woody plants defend themselves chemically instead, and they invest in that chemistry over a very long horizon: tannins, alkaloids, terpenes, and glycosides laid down in bark and heartwood as a standing arsenal. Much of what we call medicine is exactly this defensive chemistry, borrowed. The very compounds a tree evolved to poison a fungus or deter an insect are the ones that, at the right dose, quiet our pain or slow our microbes. The bitterness of yellowroot and the sting of sumac are the plant's armor, and the armor is the apothecary.

The medicine lives in bark, cambium, root, and resin

With an herb you often use the whole soft plant. With a woody plant the medicine is concentrated in the durable tissues: the bark and the thin living cambium beneath, the roots that mine deep mineral soil the herbs never reach, the resins that seal a wound in the trunk and, not coincidentally, salve a wound on us. These are the plant's most defended tissues, which is precisely why the chemistry runs strongest there.

Woody medicine keeps a calendar. Bark loosens and slips most easily in spring when the sap rises and the cambium is active, which is why traditional bark harvest is a spring craft. Roots are richest and best dug in autumn, after the plant has drawn the season's sugars and compounds downward for winter storage. The old harvesters were not being poetic about timing. They were reading the plant's own chemistry through the year, and taking each part at the hour when the part was strongest.

V · Five woody healers you can grow

Five woody healers you can grow

Here are five woody plants with genuine, documented traditions of use, all of them native or long naturalized, all of them plants we grow here in Aiken. I offer these as history and natural history, a way of seeing the trees around you differently, and not as instructions. Please read the note at the foot of this section before you brew anything.

No plant tells the story better. From Sumerian clay tablets to Hippocrates to a German laboratory in 1828, willow bark is the thread that runs from folk remedy to the aspirin in your cabinet. The active glycoside, salicin, takes the tree's own name. Willows want wet feet and give back fast growth, silver catkins for the first bees, and a living link to the longest continuous medicine in the written record. We grow several, from the woolly dwarf Salix tristis to the big silver-catkined Salix chaenomeloides.

Yaupon is the best known of North America's few native caffeine-bearing plants, and the leaves were brewed by the Cherokee, Timucua, Muscogee, and others into the ceremonial Black Drink at least a thousand years ago. The unfortunate species name, vomitoria, is a European slander: the plant does not induce vomiting, and the misunderstanding came from the purification rituals the drink accompanied. Yaupon makes a tidy evergreen hedge, feeds birds through winter, and asks almost nothing of the soil. Few plants carry so much ceremony in so plain a leaf.

Sweetbay · the bitter-aromatic bark

The magnolias are old souls, and the bark of our native sweetbay was a valued bitter, aromatic tonic in early American practice, learned in large part from Native peoples, who used warm decoctions of the bark against fevers and aches. A world away and along the same family line, the bark of the Asian Magnolia officinalis has anchored Chinese and Japanese medicine for two thousand years, prized for calm and easy sleep. Two continents, one genus, the same instinct to reach for magnolia bark. Sweetbay is half-evergreen in the South, lemony in bloom, and happy in the wet ground where other trees sulk.

Do not confuse the harmless red sumacs with poison sumac, which wears white fruit and haunts the swamp. The red, upright drupes of smooth sumac are coated in malic and ascorbic acid, tart with vitamin C, and steeping them in cool water makes the pink, lemony drink that frontier households and Native peoples alike leaned on when citrus was nowhere to be had. The bark and leaves are strongly astringent and were used across many nations for the throat and the gut. Smooth sumac blazes scarlet in fall and holds the seed heads through winter for the birds.

Yellowroot · the buttercup that went to wood

Yellowroot is a low woodland shrub, one of the few truly woody members of the buttercup family, and the roots run a startling yellow because they are dense with berberine, the same bitter antimicrobial alkaloid that made goldenseal famous. In eighteenth and nineteenth century Appalachia, yellowroot tea was a household bitter tonic reached for against sore throats, mouth sores, and unsettled stomachs. The plant knits into a handsome, drought-tolerant groundcover for shade and the edge of moving water. A small woody plant, an enormous folk reputation.

A living apothecary, and how to enter it

Here is the thought the meditation finally set down in front of me, the one I wanted to give you. A living apothecary does not need a raised bed. A living apothecary is Central Park, where willows lean over the Pond and witch hazel blooms in the cold. A living apothecary is the Grand Canyon, where the pinyon pines have fed and salved people for ten thousand years. A living apothecary is every forest on earth, standing in plain sight, dispensing nothing to no one and everything to anyone who learns to look. The pharmacy was never really indoors. We just built a little indoor model of it and forgot to walk back out.

If you want to walk back out, the way in is attention, the same slow attention those first unnamed healers paid. Start by learning to name three woody plants near where you live, well enough to be certain, in every season. Certainty is the whole game with plants: the difference between smooth sumac and poison sumac, between a friendly root and a toxic one, is the difference identification protects. A good regional field guide, a plant walk with a local botanist, and the patience to return to the same tree across a year will teach you more than any amount of reading.

Ways to learn more, and to engage

Your state's cooperative extension service and land-grant university keep free, regionally accurate plant information, and most run master gardener and master naturalist programs open to anyone. Your local native plant society runs walks led by people who know exactly which tree is which. A nearby botanical garden or arboretum labels its woody plants, which makes an afternoon there a slow, reliable lesson. A university herbarium, often open to the curious by appointment, is a library of pressed certainty going back a century or more. And the ethnobotanical literature, from regional works to the peer-reviewed record, will take you as deep as you care to go into who used which plant, and how, and where the tradition holds up.

A gardener's ethic for wild woody medicine

If you ever do harvest, harvest as a guest. Never take the first plant you find or the last; leave the strong ones to seed. Take bark from a pruned branch, never a girdling ring around a living trunk, which kills the tree. Dig roots only where a plant is abundant, and never from a rare or protected species. Ask permission on private land and know the rules on public land, where wild harvest is often forbidden for good reason. The oldest traditions of use were also traditions of restraint, because a people who wiped out the medicine did not have the medicine. The best way to keep a woody plant in your apothecary is to plant more than you take.

And then there is the quietest way in of all, the one I keep coming back to when I sit in the morning. Plant a woody healer yourself. Put a willow at the wet corner, a yaupon by the door, a yellowroot along the shaded seep. You will not likely brew from these plants, and you should not without training. But you will live alongside them, watch the bark thicken and the roots deepen, and understand in your body what those first healers understood: that medicine, at its root, is a relationship with a plant that outlives you, tended patiently, and never once mistaken for a thing you simply own.
